GREEN MACHINE

Aroma: citrus zest, grapefruit, pine

Flavor: pillowy body, citrus/grapefruit, medium bitterness, piney/resin

green machine is our house ipa brewed with a touch of wheat and aromatic malt. hopped with citra, mosaic, and amarillo in the kettle, and dry hopped with citra/ella. we ferment this brew with a classic ale strain to provide a pop of esters and a slight haze. medium in bitterness with a soft body.


RETALE HOPTIMIZATION

Style: cold iPA

Color: golden yellow

ABV: 6.3%

Aroma: candy-like fruit

Flavor: watermelon hard candy, fruit stripe

brewed in collaboration with our neighbors, flywheel digital. for this batch we utilized the experimental hop, anchovy, which gives off unique notes of watermelon jolly rancher and fruit stripe gum. lighter in body and bitterness this brew was fermented cool with our house kolsch yeast.


TONTOS EN LA NOCHE

Style: double decocted barrel aged baltic porter

Color: black

ABV: 9%

Aroma: chocolate, dark roast

Flavor: baker’s chocolate, whiskey, roasted malt

Brewed in collaboration with our friends from los dos patrillos cerveceria in Colorado. we double decocted this batch for added malt emphasis, and rested in bourbon barrels for over 2 years. rich malt flavor throughout with notes of dark chocolate, dark roast coffee, whiskey, and toasted bread.


PEACH COBBLER SOUR

A MULTI-YEAR AGING AND BLENDING PROCESS THAT COMBINED SEVERAL DIFFERENT BARRELS FROM OUR CELLAR. WE RACKED OFF A PORTION OF OUR MOST RECENT BLEND AND CONDITIONED IT ON LOCALLY GROWN RHUBARB. WONDERFULLY BRIGHT AND FUNKY WITH A TOUCH OF TARTNESS AND A MELLOW HINT OF RHUBARB.

Coldstream is our first “cold ipa” brewed at DBC (think hoppy lager). Made with an array of lightly kilned malts, we then worked in additions of citra/mosaic to the kettle. For the dry-hop we dosed in a light sprinkling of New Zealand Nectaron to drive home the bolder tropical profile.
